Haven’t posted a recipe for a while… so here goes!

You want pancakes… you want FRUIT pancakes. Fuel for those Saturday morning play sessions that last until Sunday morning. But you don’t happen to have a flat of fresh blueberries lying around, amirite?

Simplest thing in the world to make pancakes from a mix… and punch them up with some inventive additions from the stuff in your cupboards and fridge.

I use Krusteaz buttermilk pancake mix. Add the recommended water and mix the whole thing with a whisk in the measuring cup; saves a bowl, and you can pour the batter directly into the pan, saving a ladle too. (Rinse the measuring cup out immediately though, that stuff turns into concrete when it dries :) )

For fruit flavor, either replace the water with fruit juice (I like Kern’s mango nectar), or stir in some fruit preserves (Bonne Maman blueberry is good), or both.

If you have an apple, you can grate it into the batter (and reduce the liquid a bit), and add some cinnamon and maybe a lil nutmeg. Or… like corn flapjacks? Stir in some instant grits (Albers!), and maybe add some frozen corn too… it’s a sweet vegetable and goes great in pancakes! Think corn fritters.

Cook one pancake at a time, cooking the first side till bubbles rise to the top and then flipping and cooking the other side.

Maple syrup is the  classic topping, of course. But if you don’t have 100% pure, don’t settle for the fake stuff. Honey is great, and so is more of that blueberry jam.

And btw, here’s some info about the pancake bunny meme. Apparently it was over in 2003 :(

    No need to use a mix to make pancakes. I hate measuring stuff, so a recipe that doesn’t require weighing/measuring is great for me! Make batter for pancakes and more by getting a regular sized coffee mug (contains around half a pint) and pouring flour to the brim, pour it into a bowl, refill the mug with milk to the brim, pour that into the bowl too, then add a beaten egg and blend with a mixer. If it’s a bit too thick, add a little extra milk or some swear by a drop of soda water for light fluffy pancakes :)

    I often add a small tin of sweetcorn, tabasco sauce and some chilli sauce to the mix and serve it with grilled bacon or sausages and tomatoes.
